STREUSEL (Gluten-Free) MINUTE CUPCAKES


Streusel (gluten-free), Coffee Cake Cupcakes

3 Tbsp Coconut Flour
1 Tbsp Arrowroot Flour
½ tsp Baking Powder
2 Tbsp Maple Syrup or Agave Nectar
Pinch of Cinnamon
¼ tsp Salt
2 Tbsp Walnut Oil or Coconut Oil (melted and cooled)
1 Egg
1 Tbsp Coconut Milk
2 Tbsp Almond Meal Streusel Topping (see recipe below)

Combine all the ingredients except the struesel topping and set aside (about 30 seconds)
Scoop batter into lightly greased silicone muffin liners (4 small or 2 large ones)
Top with streusel topping and microwave for 1 minute

Cool and enjoy.


Almond Meal Streusel Topping:
    ½ cup almond meal
    2 Tbsp palm sugar
1 Tbsp melted sweet butter or coconut oil
¼ tsp cinnamon

Mix to combine all ingredients
Keep in refrigerator until ready to use
Yeilds about ½ cup
